Ingredients for Chocoflan
The chocoflan is made up of three layers, the first of caramel that goes in the bottom of the mold, then when turning it it will be the top of the cake, the second layer is of cheese or flan, which will be in the middle and finally the layer of chocolate cake that in the end will be the base of the cake.
For the caramel layer
Half a cup of sugar
A four cup of mineral water
For the layer of cheese or flan
A canned condensed milk (395 grams)
Five eggs
Milk (395 grams)
A tablespoon of vanilla
For the chocolate cake layer
One and a half cups of wheat flour
Four eggs
A cup of cocoa powder (Or non-instant chocolate)
One and a half cups of sugar
Half a cup of oil
Half a cup of milk
A tablespoon of baking powder (10 grams)
24 cm diameter crown mold or a 20 cm diameter round mold.
Chocoflan Preparation Step by Step
STEP 1. Make the caramel layer
The first thing you should do is butter the mold. To make the caramel, place a pan or a small pot over medium heat, add half a cup of sugar and a quarter cup of water. Let it become caramel, without stirring or touching it to prevent the sugar from crystallizing and leaving lumps.
When it begins to take caramel color you must lower the flame and move the pan with circular movements so that everything is caramelized and has a light caramel color you must empty it into the mold quickly.
STEP 2 – Make the cheese or flan layer
Beat the five eggs, the can of condensed milk, the same measure of whole milk and a tablespoon of vanilla in a large bowl by hand. After beating well, add the mixture to the mold where you have emptied the caramel, which will already be hard.
Bake this cheese in a double boiler at 220ºC for 20 min, so that it does not burn.
STEP 3 – Make the chocolate layer
To do this, you must mix all the ingredients by hand in a bowl. Mix 4 eggs, a cup of cocoa or chocolate powder, a half cup of milk, a half of oil, one and a half of sugar, a tablespoon of baking powder, and a cup and a half of all-purpose wheat flour.
After 20 minutes of the cheese or flan in the oven, we take it out and add the layer of chocolate carefully and with a spatula, spread it well so that it is uniform. Return to the oven in a water bath at 220ºC for 40 to 45 minutes. It will be ready when you insert a toothpick and it comes out dry.
